BREWERY

Our brewery sits at the back of a century-old building originally built as a heavy machinery garage, later occupied by a printing press before being transformed into a brewing facility. The space houses a 15bbl brewing system producing roughly 1850 litre batches, with a couple of tanks holding closer to 3700 litres of beer. Our lagers and ales ferment and age between three and eight weeks on average, in vertical and horizontal stainless-steel vessels. Some rare specialty ales spend months and even years in second-use barrels with wild microorganisms, creating complex and intricate flavours.

IRVING Best Bitter, 4.2%

Burton upon Trent, considered by many to be the birthplace of Pale Ale, is known in the brewing world for its extremely hard, sulfate rich water. In our efforts to duplicate its water profile, our Best Bitter displays toasted, nutty, and caramelized malt flavours backed by a mineral-driven, lengthy hop finish that gives the beer incredible dryness while exhibiting flavours of orange pekoe tea and orchard stonefruit.

GLADSTONE Golden Ale, 4.8%

English Golden Ales were born from a desire to retain the ethos of Pale Ale brewing while offering refreshment beyond what the latter could offer. Brewed with 100% Maris Otter barley from the UK and hopped thoughtfully with East Kent Goldings and First Gold hops, this ale is highly quaffable and lends itself to great conversation and reasonable mornings.

SOMERSET India Pale Ale, 5.8%

Regardless of the fact that English IPA has very little in common with its modern counterparts, one can still expect firm bitterness and generous hop expression, although somewhat nuanced when compared to today's explosive India Pale Ales. Expect malt notes of biscuit and light caramel that give way to subtle apricot and bright citrus hop flavours, finishing with an earthy, drying bitterness.

VIM & VIGOR Pilsner, 5.2%

Inspired by the hoppy and bitter pale lagers of Northern Germany and brewed with North American flair, our pilsner has established itself as an icon of the Ontario craft beer industry and is highly respected well beyond provincial borders. Clean, crisp, and refreshing.

VICTORY PARADE Festbier, 5.6%

What we refer to as "tent beer" is designed to emulate the medium-strength lagers consumed in copious amounts at Munich's annual Oktoberfest. Clean and lean, with enough satisfying malt flavours to keep you engaged, this is one of our annual releases that people start asking about months before its release.

RABBLE ROUSER India Pale Ale, 6.8%

Brewed with a nod to the West Coast with a subtle dash of New England flavour, Rabble Rouser is a unique IPA that delivers a well-balanced hop attack with flavours of peach, mango, and pine. Dangerously drinkable with a firm but pleasantly bitter finish.

PREMIO - Italian Style Kellerpils, 4.8%

Inspired by the unfiltered and dry-hopped pilsners perfected by craft brewers in Italy, Premio has little in common with the Italian imports found on North American shelves. Expect a rush of European hop flavour to match the heady nose and flavourful bitterness of this elegant premium lager.

VALOUR Classic Saison, 6.0%

True farmhouse ales are dry, spicy, fruity, and hoppy. Our version is brewed with barley, wheat, oats, and rye to emulate the flavours found in historical examples. We then hop it with old world hops for a sense of rusticity. Both complex and refreshing, this ale has won both Gold and Bronze at the World Beer Cup.

EXILE West Coast Pilsner, 5.0%

Combining the crisp drinkability of a pilsner with the bold hop character of a West Coast IPA, Exile hits all the right notes. Light-bodied with firm bitterness and a dry finish, this beer bursts with bright modern hop aromas while honouring lager brewing traditions through its clean, lean profile.

GRACE & GRATITUDE - Saaz Lager, 4.5%

Inspired by a once in a lifetime trip to the Czech Republic, this lager is brewed entirely with Inspired by a once in a lifetime trip to the Czech Republic, this lager is brewed entirely with Bohemian Saaz hops and Moravian barley, resulting in a deep golden beer with nuanced hop flavours and an elegant malt profile. Simple and uncomplicated while remaining delicious and engaging.

PROWESS Pale Ale, 4.8%

Today’s pale ales are known for hop-forward aromatics that encompass the entire fruit salad of hop descriptors. Prowess taps into these heady aromas while remaining crisp and refreshing due to its relatively low alcohol and simple malt bill. A modern ale for the modern beer drinker.

FORTITUDE Stout, 5.4%

A generous helping of flaked oats gives Fortitude a rich, full mouthfeel while a firm dose of bittering hops lends structure to this delicious stout. Expect notes of dark baker’s chocolate, French roast coffee, and oatmeal chocolate chip cookies. Substantial and satisfying.

Our products are canned and bottled in-house using our own canning and bottling machines. Crafted with care and packaged without compromise, we keep our beer cold and sell it fresh. While we do our best to keep several styles available, shortages do occur and brands do rotate and evolve. While some of our specialty products may change and develop in flavour over time, the vast majority of our beer is brewed to be consumed as fresh as possible.
